Apple Slaw with Mammoth Cheddar

Ingredients

¼ cup apple cider vinegar

1 tbsp. spicy brown mustard

1 tbsp. olive oil

¼ tsp. sea salt

¼ tsp. fresh ground black pepper

1 medium cabbage, shredded (4 cup)

1 small red cabbage, shredded (2 cup)

2 large carrots, shredded (1 cup)

1 medium parsnip, shredded (1/3 cup)

1 Granny Smith apple, unpeeled and cut into thin strips

1 Gala apple, unpeeled and cut into thin strips

¼ cup fresh flat leaf parsley, chopped

4 oz. Carr Valley Mammoth Cheddar, cut into small wedges

Directions

1. In a metal bowl, whisk together vinegar, mustard, oil, salt and pepper; set aside.

2. In a large wooden salad bowl, combine cabbage, carrots, parsnip, apples and parsley; drizzle on vinaigrette and toss to coat well.

3. Chill for at least 20 minutes to allow flavors to combine, and then arrange cheddar wedges around the edge of the salad in the bowl.


Apple Cobbler with Mammoth Cheddar Cheese Topping

Ingredients

Cobbler:

¾ stick of butter

5 lbs Cox-Orange Pippin Apples (peeled, cored, quartered and cut into ¼ inch wedges)

¾ cup sugar

2 tbsp. all purpose flour

1 tsp cinnamon

½ cup heavy cream

¼ cup brandy

Topping:

2 cups of all purpose flour

2 tbsp. of sugar

1 tbsp. of baking powder

½ tsp. of salt

1 ¼ stick of butter (chilled and cubed)

1 cup Carr Valley Mammoth Cheddar

cup cream

2 eggs

Directions

1. Apple Cobbler- Pre-heat the oven to 375 degrees. Melt the butter, add the apples and cook over medium-high heat. Add the cinnamon, sugar and brandy. Cook the mixture for about 2 minutes. Remove to a large bowl. Mix the cream and flour together. Stir through. Place into a 15x10x2 inch baking dish.

2. Topping- Mix the flour, sugar, baking powder and salt. Add the butter and work with fingertips until it resembles a coarse meal. Stir in the cheese. In a separate bowl, mix the eggs and milk and then stir into the flour mixture. Drop the dough by heaping tablespoons. Top with fresh nutmeg. Bake for about 45 minutes. Serve Warm.
